Our signature style that started it all and the foundation for our approach to making great tasting whisky. 100% hand malted Virginia barley, dried with hand- cut apple wood and cherry wood smoke. Double pot-distilled at a low 150 to 160 proof to enhance the fruitiness. Matured in ex-bourbon barrels with progressive infusions of toasted apple wood and oak chips.
TASTING NOTES
Nose: Rich aromas of suede, olive tapenade, honey and wood fire
Palate: dried mango chutney and clay with a silky dry fruitiness, medium-full body
Finish: Long and spicy, with wood smoke, orange marmalade on rye toast and root beer float

Our continuing quest to bring new flavors to the whisky world led us to the delicate complexities of peachwood. Both as a smoking medium during the kiln drying process and as a maturing catalyst inside our barrels, peachwood contributes a symphony of fruity, floral notes to our signature single malt.

Nose: Complex aromas of ripe stone fruit, sweet smoke/ash (campfire)and cinnamon pastry
Palate: Medium-full body; just slightly tannic/drying, sweet but earthy at the same time; syrupy mouthfeel; flavors of marzipan, clove, orange zest, and underneath it all a subtle, salty smokiness
Finish: Medium-long, dried fruit, raw honey, and toasted oak notes

Our signature single malt, aged with a progressive series of hand toasted, select seasoned, new and used applewood and oak chips inside used bourbon barrels, transferred to a second used bourbon barrel and then finished in used Apple Brandy barrels. This stunning whisky acquires additional depth and multiple layers of flavor attributed to the residual brandy spirits in the wood.

Nose: Fragrant nose of ripe orchard fruit, candied ginger, fresh sawdust, and damp soil.
Palate: Silky body reveals a palate composed of toasted cinnamon stick, sandalwood, dried apples, lemon zest, and barley sugar.
Finish: Faint white pepper note accompanies a subtle heat that smolders into a sweet and savory finish of apple marmalade on freshly toasted bread.

This process results in a deep rich flavor and subtle sweetness, attributed to the residual wine in the wood.
